Hot Truck or Market Truck? How Lavender Haze Mobile Picks the Right Rig

Since we introduced Lavender Haze Mobile back in February, the most common question hasn’t been “what’s on the menu” — it’s “wait, which truck are you sending?” Fair question. There are two, and they’re not interchangeable.

The hot truck is the one built to cook. It’s the right call for a wedding, a backyard party, or a tailgate where people expect food made and finished on-site — hot off the line, plated or handed over the counter, the way you’d get it from any of our stationary kitchens. If your event needs a full menu cooked in real time, this is the rig.

The market truck — we also call it the cold truck — is built for a different job: quick, grab-and-go service at farmers markets, festivals, and smaller gatherings where speed and a lighter footprint matter more than a full cook line. Think refrigerated cases, fast turnaround, and a menu built around items that travel well rather than items that need a flat-top.

When you inquire, tell us the shape of your event — guest count, whether you want food cooked to order or ready to grab, and what the venue can accommodate — and we’ll tell you which truck actually makes sense. Sometimes the honest answer is neither, and one of our stationary kitchens is the better fit. That’s fine too.
