Twice a week, before most of Madison has had coffee, someone from the Lavender Haze Hospitality kitchen is already at the farmers market — not shopping for inspiration, but buying the actual ingredients that go into that week’s menus.
It’s a habit that predates the marketing plan. Farm-to-table shows up on our homepage because it shows up in the truck first: salsas built around whatever tomatoes looked best that morning, dressings made with a grower’s fresh herbs instead of whatever’s sitting in a distributor’s warehouse, dips and shrubs that change slightly week to week because the produce does too.
Lavender Haze Mobile is the most visible version of this. You’ll find the truck Wednesdays at Capitol View Farmers Market, selling our lineup of pre-packaged salsas, dressings, dips, and shrubs directly to market-goers, and Sundays at Northside Farmers Market. But the sourcing habit runs through the whole family of brands, not just the one with wheels — when a seasonal menu leans into peak sweet corn or good tomatoes, that’s the market talking.
It’s slower than ordering everything from a single distributor. It also means the menu actually changes with the seasons instead of just saying it does.
